Gingerbread Men from Nikki and David Goldbeck’s American Wholefoods Cuisine
5 c whole wheat pastry flour
1 t baking soda
1 t baking powder
½ t nutmeg
1 t cinnamon
1½ t ground ginger
¼ t salt
¼ c oil
¼ c melted butter
½ c honey
1 c molasses
¼ c Soy Dream or milk
Combine dry ingredients. Mix wet and mix into the dry to form a stiff dough. Chill in refrigerator for 1 hour or longer.
Preheat oven to 375°. Roll part of the dough on a well-floured surface to about 1/8-1/4 inch thickness. Cut with cookie cutters. Transfer with a spatula to a cookie sheet spread very lightly with butter, arranging them close but not touching. Bake for 8-10 minutes and cool on a rack. Ice, if desired, with Buttercream Icing and decorate with sprinkles.
Yield: About 60 cookies.
Time: About 3 hours, 15 minutes to 3½ hours.
Note: Buttercream Icing: ¼ c butter, 1 t vanilla, ½ c Soy Dream or milk, and enough powdered sugar (at least 4 c) blended together to make a thick icing.
